When I started my training in Japanese cuisine as a teenager, I was drawn by the exquisite way food is presented. High-class Japanese cuisine had an unparalleled beauty far beyond my imagination and “understanding Japanese cuisine because I’m Japanese.”
Japanese cuisine values harmony with nature and expresses a sense of the season. It enriches our experience through taste, appearance, texture, and aroma.
