When I started my training in Japanese cuisine as a teenager, I was drawn by the exquisite way food is presented. High-class Japanese cuisine had an unparalleled beauty far beyond my imagination and “understanding Japanese cuisine because I’m Japanese.”

Nicho ryotei in Setouchi offers unique fine dining based on the traditions and culture of Japanese cuisine with an essence of “surprise” beyond the imagination and expectations of our guests.
With its mild climate, the Seto Inland Sea has the characteristics of an enclosed bay. A significant difference in the sea level at high and low tide creates a strong current which, in turn, brings nutrients up from the sea bed, promoting the growth of plankton which attracts many different kinds of fish. Umami-rich Seto fish are raised with a rich supply of food in the fast current.
